BLACK RICE BURRITO

who does not like burrito? how about eating your fave mexican dish in a healthier way?

Recipe:

500g ground beef

1/2 cup red onion - chopped
4 pcs garlic - minced
2 tbsp tomato paste
1 tbsp cumin 
1 tsp cayenne (your preference)
1 tsp oregano
1/2 tsp salt
1 tbsp squuezed lemon 
1/4 c water
Black rice
1 can refried beans
Cheddar cheese (your preference)
1/2 c Sour cream
Tortillas 
Adjust salt, pepper and sugar to taste 

 

 

Medium heat. Saute garlic onion in oil.
Add beef and crumble til brown.
Add tomato paste, spices(cumin, cayenne, oregano), salt, lemon, water.
Mix and simmer on low heat(5-10mins) til not watery
Remove from heat. Cool

Prepare burrito
Lay tortilla
Rice
Beans
Meat
Cheese
Sour cream
